Clam Chowder

There is a new challenge this week on the Noel Mignon Challenge Blog . . . the Home Cookin' Challenge. This was my take on it using a mish mash of past Noel Mignon kits. :)

Homemade Clam Chowder is a favorite at our house. :) So I had to pay homage to it for this challenge. :D The recipe is included on a card behind the photo.

CLAM CHOWDER

2 (6.5 oz.) cans minced clams
1 cup diced celery
1 cup chopped onions
2 cups diced potatoes
3/4 cup butter
3/4 cup flour
1 qt. Half and Half
1 1/2 tsp. salt
Pepper to taste
1/2 tsp. sugar or red wine vinegar

Drain liquid from clams and pour just the liquid over veggies. Add enough water to cover. Cook until tender. (I add the veggies to the pot in this order as I cut them: celery, onions, potatoes -- because the celery and onions take longer to cook ). In another pan, melt butter. Add flour. Add cream stirring constantly until smooth and thick. Add undrained veggies. Add clams. Heat through. Season with salt, pepper, and sugar/red wine vinegar.
